It's rainy season and I can't tell you how perfect the season is for this spicey, delicious, bud stimulating dish. Ever heard of pepper soup? Yes of course, who have not especially if you're of Nigerian origin. Even if you've not, the name alone should describe what it is for you. It's practically soup of pepper! Lolz!

Pepper soup is one of the most popular food on the Nigerian streets especially at evening and night times. That is not to say that it can't be enjoyed at the comfort of your home peacefully. You find it sizzling away sending it's aroma across different realms of it's reach right into the nostrils, stimulating the appetite and beckoning on adventurous taste buds to give it a try. In road side bars and mama-puts, you hardly find it absent among men who have gathered to relieve themselves of the stress from the day's work or boredom.

It's common accompaniment include agidi/eko (made from white corn flour), swallow, boiled white rice, boiled unripe plantain, or just like that. Many like to "wash" it down with drink of any type ranging from beers to soft drink to palm wine. 

Peppersoup is a simple dish that requires just few ingredients of which the main ingredient is the meat used to prepare it. Any type of meat can be used viz: goat meat, chicken, beef, cow skin, cow leg, offals, cat fish, etc. But the most popular and tastier is goat meat which has a characteristic gamey taste and a palatable flavor highlighted by the fatty component. It's also tender with a very thin skin that is easily cooked unlike that of cow skin. 

Peppersoup has a very light consistency because it's recipe does not consist of any thickening agent and it is very easy to prepare.The nutritional value of peppersoup is basically protein from the meat of course and minerals from the  spices and vegetable.

Ingredients

-Goat meat - 500g, medium cut

-Red fresh pepper - 10pcs, grounded

-Knor cubed seasoning - 3cubes 

-African nutmeg (ehuru) - 3pcs, grounded

-Crayfish - 1/8cup, grounded

-Scent leaves(nchanwu) - 1cup, picked

-Salt to taste

-Water


Procedure

-Wash the meat and put into a clean pot.

-Add salt, the cubed seasoning, and water 2inches above the meat level in the pot.

-Put on medium heat and allow to boil for about 20mins.

-Add the pepper, crayfish, African nutmeg, stir and cover the pot to boil for 15mins.

-Check for salt and adjust the taste.

-Wash the scent leaves and add. Allow the heat on for 3mins more and bring down.
