Good morning plantain (Hungry emoji), those are usually my first words at the sight of Plantain delicacies in the morning. Fried Plantains are like big warm hugs that cover you with so much happiness and satisfaction. Plantain is common in West and Central Africa, South and Central America, and the Caribbean Islands. So much love for fried Plantain in Nigeria. It complements just about anything. Back to the mouth-watering and heart- stealing Plantain Frittata.

WHAT IS PLANTAIN FRITTATA?

Frittata is an egg-based Italian dish similar to an omelet or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses, or vegetables. The word frittata is Italian and roughly translates to “fried”.

Derived from the Italian dish, Plantain Frittata is a mixture of diced/sliced fried plantains, eggs, veggies, and meats either cooked or baked.

HOW TO MAKE PLANTAIN FRITTATA

This is an easy, healthy breakfast recipe. You can either cook slowly on a stove or bake and both methods should take nothing more than 40mins.

Ingredients:

· 3 ripe plantains

· 1 piece of tomato chopped

· ½ red bell pepper chopped

· ½ green bell pepper chopped

· ¼ cup Olive Oil

· 1 medium onion chopped

· 8 large eggs beaten

· 4 pieces of Chopped beef

· 2 tsp crushed pepper

· Salt/bouillon powder to taste

STEP 1: Wash beef and dice in little pieces, then add to pot and steam with a little bouillon powder/salt, and cook for about 10 minutes till it releases its juice.

STEP 2: Cut open your ripe plantain and slice into the desired shape, sprinkle a pinch, and mix.

STEP 3: Preheat the quantity of oil needed to deep fry the plantain and fry until it’s golden brown.

STEP 4: In a saucepan, add 2 teaspoons of oil, saute onions for 2 minutes, add chopped red and green bell pepper, and stir-fry for about a minute. 

STEP 5: Stir in the tomatoes and add already cooked beef and season with bouillon powder/salt and cook for about 2 minutes. Then turn off the heat and set it aside.

STEP 6: Mix the cooled stir fry mix into the beaten egg to combine properly.

Over the Stove

  • Lightly grease frying pan (Non-sticks are preferable)

  • Pour mix into the frying pan, cover with a lid and cook on low heat for 20 - 30mins or until the center firms up.

  • Let it cool and your meal is ready for consumption.

Oven Method

  • Pour the mixture into a greased baking pan and place the plantains over the mixture.

  • Place the baking pan in a 350F heated oven and leave to bake for 20- 30 minutes or until the center firms up.

  • Bring it out and let it cool. Your meal is ready, serve warm.

SERVE WITH A COLD BEVERAGE. You just had a healthy breakfast. 

NOTE:-

FAQ

  1. Do I need to spicy up my sausage or diced meat as usual? And what bouillon cube do you recommend? Ans:- NO, it isn’t necessary, a little salt or any bouillon cube/powder should do the magic. I used Knorr cubes. 

  2. What kind of plantain is best? Ans:- Ripe Plantains! But not over ripe or unripe.

  3.  How long can I preserve the food? Ans:- A day or two, as long as you properly covered it in the refrigerator, please microwave before consumption.
