A SNEAK PEAK TO DINNER IN NORTHERN NIGERIA. Recipe

 What do you think Northerners eat for dinner?

A lot of people in southern, western, and eastern Nigeria have a narrow view of the people of the North. From their languages to their culture to their food and even to their religion, the view about the northerners is often shortsighted.

For one, we believe everybody in the north is a Hausa or Fulani person ( I caught you there, didn’t I? )

We also believe the Northerners only take Kunu, Masa, and Tuwo as their only dish idea. Now, this may not be wrong but there is a whole range of dishes eaten in the north. Well, I’ll not be correcting your claims in this blogpost. Instead, we'll be talking about one of the most commonly eaten food in the North and how to prepare it. After trying out the recipe in this post, you’ll find yourself actively looking for more northern dishes to include in your meal plan.

With all being said, we'll be talking about TUWO SHINKAFA 

with MIYAN KUKA. 

This is a common delicacy eaten in Northern Nigeria and Niger. 

Do you know how Ekiti people love a well-pound pounded yam and egusi? Or how the igbos love nkwobi? Or how Ibadan people love amela and ewedu? That is exactly how much love northerners have for tuwo shinkafa and miyan kuka.

Tuwo shinkafa is made from a common staple food in Nigeria, local Rice. Now, the rice used in making tuwo shinkafa is not your normal foreign rice. It’s not basmati, Chinese, jasmine, black or any other kind of rice. It is your soft, short-grained local rice. Tuwo Shinkafa, when prepared, is usually served with different types of soup like Miyan Kuka, Miyar Tushe etc

Apart from the incredible taste, Miyan Kuka is very nutritious. The nutritional and heath benefits of tuwo shinkafa and Miyan kuka includes

  • Calcium: It is rich in calcium as a result of the baobab leaf ( Kuka powder ) used in it’s preparation. Necessary for excellent  bone, teeth and blood performance, calcium is indispensable in any diet.

  • Weight management; This dish will make you feel fuller and achieve weight loss quickly as it contains low fat and calories.

  • Detoxification and fighting off infections

To prepare tuwo shinkafa for an household of four, you’ll need

  • Three cups of white local rice.

  • Water.

Preparation steps

To prepare, 

  •  Wash the rice thoroughly with cold water.

  • Boil the rice until it is very soft. You might need to add water until a really soft consistency is achieved.

  • When it is very soft, mash until it sticks together and has a very smooth consistency.

  • Serve while hot.


Miyan kuka is the most common accompaniment to a well-made Tuwo shinkafa. It could either be thick or light, depending on the amount of ingredients used in making it. Miyan kuka, if rightly prepared, will have you losing your home training in public. It’s a finger licking soup and boy!do you lick your fingers while enjoying it.

To prepare, you need the following ingredients.

  • 4 table spoons kuka powder ( Dry baobab leaves powder )

  • 1kg Cow ribs ( cut into pieces )

  • 2 table spoons dry crayfish.

  • 2 cooking spoons palm oil

  • Catfish ( Dry fish )

  • 1kg chicken

  • 1 flat round dawa dawa ( you can substitute with locust beans, okpe, ogiri )

  •  5 piece Habanero pepper ( atarodo )

  • Seasoning cubes.

  • Salt to taste.

  • 1 small onion 


STEPS TO PREPARE

  • Boil water and set aside.

  • Soak dry catfish in water. Wash thoroughly and debone

  • Wash cow ribs and chicken thoroughly.

  • Grind dawa dawa, pepper, crayfish


  1. Season and cook the proteins ( cow ribs, chicken, dry catfish ). Cook thoroughly over low heat so the flavours can blend well.

  2. After 30 minutes, spread the kuka powder over the stock. Stir well as you add to ensure you get a smooth mix.

  3. Add blended habanero pepper( Laredo ), crayfish and Dawa Dawa. Allow cooking

  4. Allow cooking for about 5 minutes while stirring at the intervals. Stirring at interval is important to prevent sticking to the bottom of the pot if you’re not using a non-stick pan.

  5. Season the soup and allow to cook well.

  6. Serve with Tuwo Shinkafa.
